The nutrient content of barley is well documented with research papers and findings published from institutes and universities the world over. Recently the extensive research of Dr Yoshihide Hagiwara, of the Hagiwara Institute of Health in Japan, has yielded impressive results. Dr Hagiwara tested 150 different plants and cereals over a thirteen year period and concluded that Barley had the highest number of nutrients of all of them. In summary he wrote Barley is the most excellent source of nutrients that the body needs for growth, repair and well-being. Probably the first authority to endorse Barleys use was Hippocrates, who told sick people to eat barley gruel. Barley was also used by Roman soldiers to help sustain endurance and fight sickness.

Research has continued through the Ages right into the 21st century and recent studies point to the plant having the potential to assist detoxification from pesticides when they have accumulated in the body. Other research has identified new antioxidant agents that were previously unknown in Barley.Beta-glucan found in barley is a soluble fiber-type complex sugar (polysaccharide) derived from the cell wall of barley fibre. Oats and barley contain a mixture of beta-1,3-glucan and beta-1,4-glucan. Recent research has concluded that the optimum period for peak nutritional activity is just before a grain head sprouts. This is the primary time when its nutrients and enzymes are then active. A patented process which, via heat, humidity and pressure, allows Pre-Sprouted Barley to be harvested. The Barley itself comes from closely supervised organic crops, grown in Northern Scandinavia in the land of the Midnight Sun. Attention is particularly given to maintaining good farming practice. Soil depletion is studiously avoided with fallow seasons being observed. In this way a consistency of grain and nutritional content is achieved. Old stone-mills are used to mill the grain, ensuring the fibres remain whole.

Cholesterol / Triglyceride Lowering:
Recent research has unveiled many other possible benefits from barley. Extracted compounds exert cholesterol-reducing, anti-inflammatory and anti-ulcer properties. A new antioxidant, 2-O-glycosylisovitexin (2 -O-GIV), has been isolated and reported to have antioxidant activity equal or superior to vitamin E. Recent research conducted in 2005 at the Centre for Human Studies of Foodstuffs revealed that barley powder (aktiv) significantly reduced total cholesterol, LDL-cholesterol levels and triglyceride (TGL) levels, when compared to placebo. By reducing such markers as LDL and TGL there is a reduced risk of coronary heart issues and other major vascular events. As with other soluble-fiber components, the binding of cholesterol (and bile acids) by beta-glucan and the resulting elimination of these molecules in the feces is very helpful for reducing blood cholesterol.

Blood Sugar Lowering:
Beta-glucan is, according to preliminary studies, helpful in reducing the elevation in blood sugar levels that typically follow a meal. Beta-glucan produces this effect by delaying gastric emptying so that dietary sugar is absorbed more gradually, as well as by possibly increasing the tissue sensitivity to insulin. These effects suggest possible benefit in blood sugar control in people with diabetic issues.

Immune Support:
Research indicates that beta-1,3-glucan, in particular, is very effective at activating white blood cells known as macrophages and neutrophils. These cells provide one of the immune systems first lines of defense against foreign invaders. A beta-glucan-activated macrophage or neutrophil can recognize and kill tumor cells, remove cellular debris resulting from oxidative damage, speed up recovery of damaged tissue, and further activate other components of the immune system.

Energy Production:
It has been shown that pre-sprouted barley has the potential to generate 400% more energy than conventional barley. The extremely high nutritional bioavailability and enzyme content within Pre-Sprouted Barley assist oxygen metabolism, and stimulate an increase in the metabolic rate.

Alkaline (pH balancing):
Pre-sprouted barley has a highly alkalising effect, helping to maintain a balanced body fluid acidity-alkalinity (pH). The bodys cells cannot function adequately if the pH is not within a narrow range. Most processed foods are acidic, so a processed food orientated diet generally disturbs the bodys pH balance. The alkaline minerals in barley, such as sodium, potassium, calcium and magnesium, help to neutralise acidic materials and thus promote a healthy pH balance.

Super Oxide Dismutase (SOD) is such a powerful antioxidant it is often called the anti-ageing enzyme and is known as a marker enzyme because if it is present it is an indicator of many more associated enzymes also being present.
