Kelp is a large seaweed (algae) belonging to the brown algae (Phaeophyceae). Kelp grows in underwater 'forests' and in shallow oceans, and there are approximately 30 different types of identified kelp. Kelp can be used to soften beans during cooking, and to help convert indigestible sugars and thus reduce flatulence. Because of its high concentration of iodine, brown kelp has been used to treat goiter since medieval times.
